Chocolate Chip & Banana Muffin Recipe

Looking for the perfect on the go snack that can satisfy the whole family?  This chocolate chip and banana muffin recipe certainly delivers!  Put your own spin on this recipe by adding additional ingredients such as shredded coconut, walnuts, cinnamon or perhaps all three.

Ingredients For Chocolate Chip & Banana Muffins:

  • 1 1/2 cups of flour OR rolled oat flour
  • 1 tsp baking soda
  • 2 tbsp almond milk
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 3 mashed bananas
  • 3/4 cup organic real maple syrup
  • 1/3 cup melted coconut oil
  • 1/2 cup of sugar free chocolate chips

Chocolate Chip & Banana Muffin Recipe Instructions:

  1. Preheat your oven to 325 and prep muffin pans
  2. In a medium bowl, sift together your flour, baking soda, baking powder, and salt. Set this bowl aside.
  3. In a smaller bowl, mix together your eggs and almond milk.
  4. Now, in a large mixing bowl, cream together the bananas, maple syrup, and coconut oil.
  5. Mix in the egg alternative from the small bowl from the 4th step above.
  6. Slowly fold in the flour mixture from the first bowl and the sugar free chocolate chips
  7. You can top your muffins with anything you like!  I added Cinnamon, chocolate chips and coconut shreds to add some extra zing to my banana muffin recipe.
  8. Cook time: 12-15 minutes

Breakfast Muffins

These breakfast muffins are a great way to start your morning off right!  Not only are they super easy to make but also great when you are hosting a breakfast as this recipe makes 12 small muffins AND you can also customize to suit specific dietary needs.  What more can you ask for in a breakfast muffin!

Ingredients:

• 6 eggs
• 3 tbsp soy milk (unsweetened)
• Spinach, mushrooms, ham, cheese, tomatoes… (ingredients of your choice)
• Spices, herbs, salt & pepper
• Avocado oil (optional)

Directions:

1. Preheat the oven to 375°F
2. Oil the muffin tin if you don’t use a silicon muffin tin
3. Whisk 6 eggs, 3 tbsp milk, salt, pepper and all the spices/herbs to taste
4. Divide your ingredient evenly into tin
5. Pour the egg mixture in each well to come to the top
6. Sprinkle with cheese if you want
7. Bake for 20-25 min

Note: Store in the refrigerator until ready to eat

Lemon Chia Coconut Turmeric Muffin

#1 Muffin!

This muffin receipt is by far one of the best I have made to date so I’m sharing it for all you beautiful souls out there!  Enjoy, I’m looking forward to hearing feedback on what you think about them!

WET Ingredients:

– 1 cup of full fat coconut milk
– 1 1/4 tsp of lemon zest
– Juice of two lemons
– 2-3 tbsp of chia seeds
– 1/2 cup of raw coconut sugar
– 1/4 tsp of turmeric
– 1/2 tsp of vanilla

DRY Ingredients:

– 1 1/4 cup of whole wheat flower
– 2-3 tbsp of dried coconut flakes
– 1/2 tsp of baking Soda
– 3/4 tsp of baking powder
– 1/4 tsp Himalayan salt

Instructions:

1.  Mix all the wet ingredients until sugar is well combined.  Refrigerate for at least an hour to hydrate the chia seeds. I usually keep it overnight.
2.  Line a muffin pan with muffin liners. Preheat the oven to 350 degrees F.
3.  In a bowl, whisk all the dry ingredients. Add to the wet and mix to combine (If the wet mixture was refrigerated overnight, the batter will be thick and muffin like and not flowy)
4.  Drop the batter into lined muffin pan. Sprinkle coconut and chia seeds on top. Bake at 350 degrees F / 170ºc for 26 to 28 minutes.
5.  Cool for 5 minutes in the pan then a few minutes on the counter before serving. The muffins can be kept on the counter (covered) for up to 2 days, or refrigerated up to 5
